Turkey Sausage Burger with Pretzel Bun

Kitchen to table meal of turkey sliders on a pretzel bun served with green beans and roasted fingerling potatoes in 30 minutes

Ingredients

1 pound Jennie-O® spicy turkey sausage*

1/3 C panko

1 shallot diced

1 C Mexican cheese blend

1/2 t rosemary finely chopped

4-5 Munster or Havarti cheese slices(optional)

4-5 pretzel buns split

Burger dressings: lettuce, tomato slices, pickles, Tzatziki sauce,mayonnaise, mustard or what ever is available

Sides: roasted fingerling potatoes and green beans

Fingerlings

2 pounds sliced in half and tossed in olive oil

Seasoning of choice

Green beans

3/4 -1 pound fresh green beans

Salt and pepper

Directions

Foil covered baking sheet. Pan with boiler insert. Oven temperature 400º F  Serves 4-5

Fingerlings

On foil covered baking sheet add olive oil covered fingerlings. Season with salt and pepper. Roast turning once about 15 minutes roasting time. Plate and adjust seasoning if needed

Green beans

Wash and destem green breans. Bring about 1″ to 1 1/2″ water to boil in pan with steamer basket. Add beans cover and cook until al dente about 4-5 minutes. Season and plate

Burgers

Place on Ingredients in bowl and combine.

Heat large skillet on medium high heat with 1 tablespoon of olive oil. Form turkey mixture into 4 large patties or 5 slider patties.

Place patties in skillet and cook about 8 minutes per side or until temperature reaches 165º F. Add cheese slice if desired  and cook 2-3 minutes.

Transfer burgers to split buns. Serve wth green beans and fingerlings

Note:

* I do not add salt to the turkey sausage as it is already seasoned. I will add other herbs that I have available.

 Good after a busy day with sports and school work.

Tarte Flambé or Flammekueche

A delicious alternative to standard pizzas. The sauce bacon and onions combined are a palette pleasing taste.

Ingredients

Tarte

1 1/4  C all purpose flour

3 T canola oil

5 T water

1/4  t salt

Topping

2/3 C creme fraische

2/3 C fromage blanc

1/4 t nutmeg

3/4  C bacon(turkey)

1 onion

Directions

Oven 550º F Dough recipe is for 1 tarte. 1 baking sheet [13″ by 18″] with parchment paper cut to size.

Mix flour , salt and oil together until it is crumbly. Add water gradually until dough comes together. Knead until smooth about 5 minutes. Cover and rest for 1 hour.

Topping

Slice onion very thin. Add 2 tablespoons of butter to skillet and melt. Add onions and sweat for about 5 – 7 minutes.

Cut bacon[turkey] into thin slices and fry until done.

Mix creme fraische, fromage blanc, and nutmeg together in small bowl.

Assemble tarte

Placed dough ball on baking sheet and roll and pat out dough until paper thin, Spread creme fraische mixture on dough. Add onions and bacon. Bake for about 10 minutes on lowest shelf in oven.

Remove, cut, and serve with green salad with blue cheese dressing and a dry Alsatian Riesling.

Tarte flambe is also known as flammekueche

I had bacon onion and apple cinnamon tarte flambes in Strasbourg many times. They are so delicious. It was difficult finding the dough recipe but this is how I remeber it.

Turkey Egg Noodle Bake

Ingredients

3 T olive oil

1 onion diced

2 garlic cloves minced

1 pound Cremini mushrooms sliced

1/2 C white wine

1 t thyme sliced

2 C leftover turkey diced*

1 container of creme fraiche (7.5 ounces)*

1 C chicken broth

1/4 t nutmeg

1 C green peas frozen

1/2 C Parmesan*

1/2 package of wide egg noodles

Salt and pepper

Directions

Add olive oil to large fry pan and heat then add garlic and onions. Cook until translucent. Add cremini mushrooms and thyme and cook until mushrooms have released their liquid. Deglaze with white wine over medium high heart.  Add creme fraiche, chicken broth, nutmeg and combine and simmer for 10 minutes. Add turkey and peas and cook until peas and turkey heated. Season with salt and pepper to taste.

Bring 4-5 quarts of water salted to boil. Add noodles and cook unit all dente or about  6 minutes. Drain and combine with turkey mixture. Butter a 12″ by 9 ” pan and transfer mixture to the dish. Top with Parmesan cheese and bake for about 20 minutes. 

Note:

*Cooked chicken can be substituted in place of turkey.

* I have substituted sour cream or  Mexican creme when I was out of creme fraiche.

*I have also added crushed garlic croutons to the top with the Parmesan before baking.
