Cauliflower Cheddar Cheese Chowder

Chunky caulifower cheddar cheese soup that is a favorite on cool fall evenings.

Ingredients

1 carrot chopped

1 medium onion minced

2 garlic cloves minced

2 T olive oil

1 medium cauliflower

4 C vegetable broth

2 T butter

2 T flour

2 C milk

2 C shedded cheddar cheese

Salt and pepper

Directions

Serves 4-6

Cut cauliflower in half and decore. Coarse chop florets and set aside in medium bowl

Add olive oil to large sauce pan over medium high heat.

Add carrots and onion and saute for two minutes, Add garlic and cook until fragrant.

Add chopped cauliflower and broth and bring to boil and then cover and simmer for 20 minutes.

Remove about 1/3 of the caulifower mixture to bowl and puree using immersion blender and then add back to large saucepan.

Melt butter in medium size skillet and add flour and stir for 3 minutes. Add milk gradually while whisking and cook for 5 minutes.

Add cheese and mix until blended and simmer for 5 minutes.

Add into cauliflower mixture and stir until combined. Season to taste with salt and pepper

Simmer for 15-20 minutes and serve with green salad and crusty rustic bread.

NOTE:

Toppings such as chives, croutons, crispy onion flakes, sour cream, or popcorn can be added.

If you desire a thicker soup. Make the roux with 3 tablespoons of butter and flour.

If I have leftover soup, I cook pasta elbows* and add in the leftover soup. Pour into baking dish. Pour 1/2 cup shedded cheese on the top.  Cook in the oven at 350º F for 15 minutes. I serve this as a side dish.  * Amount of pasta depends on how much leftover soup.

 

 

Romaine, Pear, and Manchego Salad

An easy to make salad with few ingredients that delivers a crunchy texture with sweet and salty flavors. It goes well with meat, fish, and pasta dishes.

The salad ingredients below are for a two-person salad.  Increase the salad ingredents for a larger salad with more servings.

Salad Ingredients

2 small  bunches romaine lettuce

1 pear

1/3 C Manchego cheese shaved

Dressing Ingredients

1/2 C olive oil

1/4 C lime juice

4 t maple syrup(real)

1/2 C Fromage Blanc or sour cream

1/2 t cumin

1/4 t red pepper flakes

Directions

Wash and dry 6 whole romaine leaves.  Line salad bowl with 6 romaine leaves.  You may need more romaine leaves for a larger bowl.

Chop remaining lettuce and place in bowl.

Make a light dressing such as a the dressing above or use a vinaigrette.

Toss lettuce with dressing.

Add Manchego and pears. Drizzle light amount of dressing over the top and serve.

How to Serve

We served this salad as part of an easy-to-fix meal with grilled steak, roasted fingerlings, lemon sorbet and fresh blueberries. Big flavors, little cleanup.

Notes

Use firm pears to add more texture.  The Manchego should be an aged manchego that easily slices.

The dressing was made with Fromage Blanc which is a fresh cheese.  Sour cream may be substituted, but will increase acidity.  Balance acidity with more or less maple syrup.

Meatballs with Stuffing in Sauce Over Pasta

Stuffed low fat meatballs with spinach and carrots for family members who are not fans of spinach or cheese. Actually they asked for more vegetables in the stuffing and less cheese.

Ingredients

1/2 pound ground beef(85% ground)

1/2 pound ground turkey breast

1/2  C Italian bread crumbs

1 egg

1 t Italian seasoning

Stuffing

1/2 C cream cheese

3/4 C died provolone

1/2 C chopped spinach

1/2 C diced carrots*

1 garlic clove minced

1 t thyme

Salt and pepper

Serve

1/4 C Parmesan

Compouund Butter

1/4 pound butter cold diced

3 T herbs chopped

Chop the herb leaves and place in small blender. Pulse 2-4 times. Add chunked cold butter and pulse until combined. Remove and place on sheet of plastic wrap and roll into log. Ready to use or refrigerate and use on favorite dishes.

Directions

Combine meat, egg, bread crumbs, and seasoning in medium bowl.

Combine cheese,vegetables, and seasoning in small bowl.

Divide meat into 12 balls using cookie scoop. On parchment paper press the balls flat and add a teaspoon of stuffing and seal the meat around the stuffing.

Add 1 T olive oil and 1 T butter(I use herbed compound butter*) over medium high heat. Brown the meatballs. Add tomato sauce and cook for 12 minutes.

Add 4 quarts of salted water to boil. Add pasta and cook following package directions. Pour sauce and meatballs on pasta. Sprinkle Parmesan and serve.

Note:

*Carrots were microwaved for 1 minute

Tarte Pizza with 4 Cheese Artichoke Hearts and Sun-dried Tomato

An easy to make 4 cheese pizza with delicious toppings. It is a no yeast pizza dough that cooks up crispy in 10 minutes or less.

Ingredients

Dough

1 1/4 C flour

3 T cano;a oil

1/4 t salt

5 T water

Sauce

2/3 C creme fraische

2/3 C fromage blanc(can substitute sour cream)

1/4 t nutmeg

Topping

2 artichoke hearts chopped

1/4 C thin sliced red onion

2 sun-dried tomatoes thin sliced

Handful of chopped spinach leaves

3/4- 1  C mozzarella shredded. Apply

1-2 slices provolone diced

3 T grated Parmesan

1/4 C feta crumbles

Salt and pepper

Directions

Oven temperature 550º F Baking sheet 13″ by 18″ lined with parhment paper Appetizer or serves 2

Mix flour,salt and oil until crumbly. Add water until dough comes together. Knead until smooth. COver and rest for 1 hour.

Sauce: Mix in small bowl and set aside

Roll  and pat dough until paper thin.  Spread sauce, half of the mozzarella and provolone. Add onions, artichokes, tomatoes. Top with remaining cheeses. Season with salt and pepper.

Bake about 10 minutes on lowest rack in oven.. Remove, slice and eat. Serve with green salad

Turkey Sausage Burger with Pretzel Bun

Kitchen to table meal of turkey sliders on a pretzel bun served with green beans and roasted fingerling potatoes in 30 minutes

Ingredients

1 pound Jennie-O® spicy turkey sausage*

1/3 C panko

1 shallot diced

1 C Mexican cheese blend

1/2 t rosemary finely chopped

4-5 Munster or Havarti cheese slices(optional)

4-5 pretzel buns split

Burger dressings: lettuce, tomato slices, pickles, Tzatziki sauce,mayonnaise, mustard or what ever is available

Sides: roasted fingerling potatoes and green beans

Fingerlings

2 pounds sliced in half and tossed in olive oil

Seasoning of choice

Green beans

3/4 -1 pound fresh green beans

Salt and pepper

Directions

Foil covered baking sheet. Pan with boiler insert. Oven temperature 400º F  Serves 4-5

Fingerlings

On foil covered baking sheet add olive oil covered fingerlings. Season with salt and pepper. Roast turning once about 15 minutes roasting time. Plate and adjust seasoning if needed

Green beans

Wash and destem green breans. Bring about 1″ to 1 1/2″ water to boil in pan with steamer basket. Add beans cover and cook until al dente about 4-5 minutes. Season and plate

Burgers

Place on Ingredients in bowl and combine.

Heat large skillet on medium high heat with 1 tablespoon of olive oil. Form turkey mixture into 4 large patties or 5 slider patties.

Place patties in skillet and cook about 8 minutes per side or until temperature reaches 165º F. Add cheese slice if desired  and cook 2-3 minutes.

Transfer burgers to split buns. Serve wth green beans and fingerlings

Note:

* I do not add salt to the turkey sausage as it is already seasoned. I will add other herbs that I have available.

 Good after a busy day with sports and school work.

Grilled Radicchio with Bocconcini Mozzarella

This recipe makes great bruschetta of tomato, mozzarella, and radicchio.  I would highly recommend giving this recipe a try.

Ingredients

1 radicchio head

6 Bocconcini  Mozzarella

2 T olive oil

2 large heirloom tomatoes

Optional 24 Kalamata olives pitted

6  slices of olive bread or sour dough

4 large garlic cloves finely minced

1/2 C olive oil

Directions

Grill temperature 320º F Oven temperature 375º F

Remove core of radicchio and separate the leaves and wash gently then dry. Prepare 12 leaves. Drain the cheese and cut 6 into half. Season with sea salt and pepper. Place a  cheese half inside a leaf and brush with olive oil.

Fold the radicchio around the cheese and skewer it.

Heat grill to 320º F Brush packets with olive oil and season with salt and pepper then grill about 3-4 minutes per side until the cheese melts.

Garlic Toast

Heat olive oil in small sauce pan and add garlic. Cook for 3-4 minutes. Remove from heat and set aside. Slice 6  one inch slices of bread and remove crusts and cut them into half. Place slices on foil covered baking sheet.Brush both sides with garlic olive oil. Bake  about 7 minutes per side. Remove to rack and cool. Maybe made ahead of time and stored in sealed bag.

Place a slice of tomato on the toast and season with salt and pepper.

Remove the skewers and place radicchio packets on  the tomato slices and serve. Optional: Place olives on top of the open packets

Blue Cheese Quiche

Ingredients

1 9 inch deep dish pie crust

3 ounces of a good blue cheese such as Maytag or a Roquefort room temperature

3 ounces cream cheese softened

2 T butter softened

3 eggs well beaten

1 C creme fraiche

1 T melted butter

Salt and pepper*

Optional ingredients can be added such as 3 ounces crumbled bacon, fresh or  carmelized  pears,figs, or onions, walnuts.

Directions

Oven temperature 400º for pie crust  375º F for Quiche

Blind bake the pie crust.  Gently poke holes in the crust and put in freezer 10 minutes. Line crust with parchment paper and fill with beads or beans. Bake at 400º F for about 15 minutes or until crust is golden. Remove beans and parchment paper and bake for 10-15 minutes. Remove and cool.

In stand mixer using paddle attachment whip cream cheese, blue cheese, and butter until smooth. Add eggs, creme fraiche, and melted butter and mix thoroughly. Season to taste with salt and fresh ground pepper. Pour into pie crust and bake 25-30 minutes.

Cool and serve*.

Note:

Eliminate the pepper if you prefer a sweeter quiche.

Can  be served with carmelized fruit or onions on the side.

 

Pita Pockets with Boca Chic’n Veggie Patties

Vegetarian burgers with salad and a pita pocket.  A great way to eat fast, healthy, and vegetarian.

Ingredients

2 pitas sliced in half

4 slices of pepper jack cheese

4 Boca chic’n patties

3 C chopped salad including lettuce or slaw, spinach,tomato, peppers, broccoli, onion, celery, carrots, black olives,and cucumbers.*

1 sliced avacado

Paul Newman’s® Sesame Ginger Dressing

Directions

Heat oven to 410º

Place 4 patties on baking sheet and bake for 10 minutes and then turn them over and bake for another 5-7 minutes.

Insert  slice of cheese per half pocket and place them on baking sheet. Place them in oven about 3-5 minutes to melt the cheese.

While patties cooking make a chopped salad and slice the avacado.

Remove patties and pitas from oven. Place a pattie in each pocket and liberally stuff them with chopped salad and avacado.  I like salad pouring out of the pitas.

Serve with Paul Newman’s Sesame Ginger Dressing

Notes:

* Salad can be made with any vegetables on hand.

Juicy Chicken Mushroom Mozzarella Burgers

Ingredients

1 1/2 pound ground chicken breast

1/2 pound Cremini mushrooms sliced

1/2 pound shredded mozzarella cheese

1/2 t thyme

1 t salt

1/2 t pepper

3 T olive oil

Ingredients

Heat 1 T olive oil over medium high heat. Add mushrooms and toss to coat then cook until moisture is evaporated. Remove from heat, cool, and fine chop.

Add ground chicken, chopped mushrooms, shredded mozzarella, thyme, salt, and pepper and  combine. Divide mixture into 4 piles and shape into patties.

Heat 2 T olive oil in non-stick large skillet over medium heat and fry patties  5- 7 minutes per side until thoroughly cooked.

Serve on large buns topped with mayonaise, slices of avacado, and lettuce.

 

 

Grilled Cheese Heirloom Tomato Sandwich

Ingredients

 3 heirloom tomatoes 1/2 inch slices

12 slices of Munster or Havarti cheese

8  1/2 inch slices rosemary-bread

6 T mayonaise

1 stick softened butter

Salt and pepper

Directions

Make 4 sandwiches

For each sandwich spread 1 1/2 T Mayonaise on bread.

Place two slices of cheese on one slice

Add two slices of tomato and generously salt and pepper the tomatoes.

Add slice of cheese and cover with bread.

Heat large skillet or grill pan on medium high heat.

Spread butter on tops of each side of bread.

Place two sandwiches at a time on pan or grill and cook until toast is golden brown on both sides and cheese has melted.

Serve with cup of tomato soup.
